The roast is omni, tuned to work in both directions. Start with espresso: 18g in, 36g out in 28 seconds, and two shots are enough to read the coffee's character. Then give the rest to filter at 1:16 — 15g to 240ml at a medium grind — since the two methods show different sides of the same bag. Grind right before brewing, especially with a small pack that goes quickly.
