The lot comes from the roaster's farm partner in Thailand and is given a special process, then roasted medium so the sweetness and acidity stay in balance instead of being covered up. Pull it as espresso for a sweet, dense shot, or brew it on filter or V60 at 1:16 to open up the floral and berry layer.
