A Brazilian coffee from The Roastery in an omni roast: a straightforward everyday choice, black or with milk. The flexible roast is the whole point here, because one bag covers the machine in the morning and the pour-over in the afternoon without switching beans.
The Roastery is a Saudi roastery, and the pack is 250g. For espresso, start at 18g in and about 36g out in 28 seconds; for filter, grind medium at 1:16 with water at 93 C. Nudge the grind finer or coarser until the sweetness and body land where you like them.
