Sofe - Colombia Peach - 100g

A cup that jumps at you with outright peach sweetness, like a peach gummy ring, alongside apricot, a touch of white wine and a floral lift. The body is syrupy and the sweetness is high, so you get a coffee that drinks like dessert while staying cleanly acidic.

The beans are Castillo from Finca Santa Monica, grown by Colombian producer Jairo Arcila at 1,450 meters, washed and then co-fermented with peach and wine yeast, which is where that fruit intensity comes from. The roast is medium light and aimed at filter: try 15g to 240ml at 92C with a bloom and two pours. The 100g pack is sized for tasting and comparing.
