A showpiece co-ferment that tastes like summer. Fermented with watermelon, it bursts with watermelon candy and fresh melon juice, lifted by red raspberry and a bright, citric acidity over a medium body. It sips clean and juicy, closer to sweet iced tea than a classic coffee.
Grown at Finca Monteblanco in San Adolfo, high above Pitalito in Colombia's Huila region, from Purple Caturra at around 1,730m. Producer Rodrigo Sanchez builds a mother culture from the cherries and feeds it panela and concentrated watermelon juice, then co-ferments the cherries for an intensely fruity result. It is roasted light to protect that expression, so brew it as a bright pour-over or an under-extracted, high-flow espresso, and try it over ice to let the watermelon sing.
